BACHELOR OF BUSINESS OF CULINARY ARTS


Why study Culinary Arts?
This course will provide students with the knowledge, skills and competencies necessary for effective kitchen management. It will enable learners to develop specialised culinary skills through the acquisition of artistic and technological competencies, within a commercial context.

Programme Modules
This award covers a number of essential modules including Culinary Arts Operations, Food Safety and Technology, Nutrition and Scientific Principles, Information Technology, Management Information Systems, Management Principles , Economics, Marketing Principles, Business and Company Law, Management Accounting, Financial Accounting, Restaurant Service, Communications and Personal Development, Gastronomy, Human Resource Management and a number of exciting, innovative electives.

Other Essential Information

Work Placements
At the end of year one all students are strongly advised to take work placement in an Irish hotel or other approved property. These placements are assisted by the LINKS office in conjunction with the student.

After the second year examinations, students undertake an accredited 30 week industrial placement, organised by the LINKS office in conjunction with the student.

A relevant industry project must be completed in respect of this placement.

If students are considering an international career the school would encourage students to study an International language during their three years of study and to complete their international placement in a location that supports the development of the language.

The School has extensive international links with hotels, tourism organisations and educational organisations. In addition the school is an active member of various hotel school associations including the Association of European Hotel & Tourism schools (AEHT) and the Council for Hotel, Restaurant and Institutional Education (CHRIE).

Career Opportunities
Graduates gain employment at Chef de Partie and Sous Chef levels and with relevant experience may become Head Chef of small and medium sized kitchens.

As this award is predominately a business degree career opportunities may be varied and exciting for successful candidates.

Follow on Studies
It is possible to pursue studies at BA honors level in the School. Students who are successful in their final examinations will be admitted directly to the final year of the BA (Honours) programme.
