Why Study?

This course aims to provide introductory skills for those with a passion for pastry and baking and who are either in the hospitality industry or considering a career change. 


What to expect

You will spend one full day (Thursdys) per week in college for the duration of the academic year developing new skills and knowledge.

During this course, you will work in training kitchens and will follow an intensive course of study.



Upon successful completion of this course, you will receive a  Certificate in Pastry, Baking and Desserts (20 credits).

  • Fundamentals of Pastry, Baking and Desserts (10 credits)
  • Modern and Innovative Pastries and Desserts (10 credits)

Graduates can apply for the following courses through the CAO ( and may be granted exemptions.

Higher Certificate in Culinary Arts – Professional Chef Programme (Level 6)

Bachelor of Arts in Culinary and Gastronomic Sciences (Level 7/8)

Essential Information: 

You will need to buy uniforms, safety shoes and a knife kit before the course starts. 

GMIT will make full arrangements for this.


Entry Requirements

QQI Level 5 award, Leaving Certificate or equivalent qualification, and/or relevant life and work experience.

Mature students (23 years of age on 1st January preceding application) can apply.

GMIT's Head of Department will assess the suitability of each candidate upon application.
