This module is designed to ensure that students gain the necessary skills and knowledge to implement sustainable practices and systems in the contemporary kitchen for maximum efficiency and to ensure their actions are contributing positively to the environment.

  1. Explore the Sustainable Development Goals (SDGs) and their application in the contemporary kitchen

  2. Apply sustainable best practices in the kitchen for maximum environmental impact.

  3. Evaluate food system innovations including sustainable diets.

  4. Create a culinary event from concept to evaluation stage which includes the key steps of project and operations management.
