Description

The aim of this module is to provide the learner with a broad knowledge of wine, from still to sparkling, table wine to fortified wine supported with tasting techniques for each category of wine.

Learning Outcomes

  1. Identify the principle factors in viticulture and vinification and how they influence, the style, quality and price of wines

  2. Locate and describe the characteristics of still wines produced in the key wine producing regions of the old and new world

  3. Define the characteristics of sparkling wine and how the key factors affecting production can influence the style, quality and price of these wines

  4. Identify and describe the characteristics of the principle fortified wines and how factors affecting production can influence the style, quality and price of these wines

  5. Evaluate and describe the key characteristics of wines through tasting techniques to assess quality and suggest food pairings

  6. Develop a knowledge of the wine market in Ireland
